Well, to begin with, it is chock full of bacon. And when have you found that bacon doesn't make things better? Infrequently, right???

But this not your typical bacon jam.

The pineapple and peppers bring it to a whole new level. The pineapple brings that beautiful tropical sweetness while the hot peppers add that kick that lets you know your eating more than just a trendy cheeseburger.

Ingredients for Spicy Pineapple Onion Bacon Jam

  • 1/2 pineapple small dice
  • 1 large yellow or white onion sliced pole to pole
  • 4 to 5 clove of garlic peeled and finely diced
  • 1 lb bacon divided into bacon strips and cubes
  • 1/3 cup brown sugar
  • 1/3 cup vinegar
  • salt and pepper for seasoning
  • Thinly slide jalapeños/serrano/thai chiles to taste

Directions for making Spicy Pineapple Onion Bacon Jam

Prepare the spicy pineapple bacon onion jam ingredients by removing the skin and core of a pineapple Use half of the pineapple and dice into small cubes.

Peel and thinly slice, pole to pole, a large onion.

Slice the chile peppers. Check to see how hot they are. Jalapenos can vary in heat.

In a skillet, cook the cubed bacon to the point right before it becomes crispy. Remove from the skillet and set aside. We will be adding it back to a skillet later in the process.

Drain the fat from the skillet keeping about two tablespoons.

Add the sliced onions. Saute until soft and beginning to caramelize (a light golden brown). You can use water, about 1-2 tablespoons at a time, to help with the caramelization process.

Add the cubed pineapple. Continue to saute until the pineapple begins to break down.

Add the  sliced peppers.

Add the brown sugar and apple cider vinegar.

Add salt and pepper.

Add the cooked bacon bits and cook until most of the liquid has evaporated.

The spicy pineapple onion bacon jam should be a deep, rich brown a develop a jammy consistency.

This condiment is best used while it is warm.
