Cheeseburger Guru Spicy Garlic Aioli in a hand-made ceramic bowl

This simple recipe is a must for your next cheeseburger project. Creamy mayonnaise combined with a few key ingredients makes for a sauce that brings a kick to the party.

If you don’t want to make mayonnaise from scratch, substitute your favorite prepared mayonnaise and add the seasonings to match your taste.

Ingredients for Spicy Garlic Aioli

  • 1 large egg
  • 1 tablespoon (15ml) lemon juice (from 1/2 a lemon)
  • 1 cup (240ml) vegetable, canola, or avocado oil
  • 3 tbsp (45g) sriracha sauce or gochujang
  • 2 cloves fresh garlic minced or pressed
  • 1/4 tsp MSG
  • 1/4 tsp (2g) salt
  • 1/2 tsp (2g) freshly ground pepper

Optional ingredients

  • 1/4 tsp cayenne pepper
  • 1 tbsp diced thai chile

Directions for making Spicy Garlic Aioli

In a jar that just fits the head of your immersion blender, add egg, lemon juice, sriracha, or gochujang, garlic, MSG, salt, and pepper.

Place your immersion blender into the container. Gently pour the oil into the container.

Turn the immersion blender on high speed; do not pulse or move the head. As mayonnaise begins to form, slowly tilt and lift the head of the immersion blender incorporating more of the oil into the mayonnaise emulsion. Continue until all oil is emulsified. Season mayonnaise to taste with salt, pepper, or other ingredients.

Refrigerate in an airtight container for up to 2 weeks.

Alt Method

If you are using prepared mayonnaise, add 1 cup mayonnaise and seasonings to a mixing bowl. Use a wire whisk to combine. Season to taste.
