Sunday brunch or not, the Bacon Cheeseburger Quiche is absolutely amazing and makes for a hearty breakfast, lunch, or dinner. The tender and flakey pie crust, filled with seasoned ground beef, crispy bacon, melty cheese, onions, peppers, and the rich and eggy filling cooked to perfection. Dressed with onions, pepper, pickles and a spicy and smokey sauce. To die for.
Be sure to give the Bacon Cheeseburger Quiche a try. It is easy to make and super tasty. You can skip the homemade pie crust by using store-bought which will really simplify the process. Everything else is just add and bake.

Ingredients for Cheeseburger Quiche
- 250g plain flour
- 125g butter diced, and kept cool in the fridge
- 2-4 tbsp ice cold water
- Salt
Filling
- 1 lb ground beef
- 1 medium onion diced
- 3 cloves garlic, finely diced
- Salt and pepper
- 6 strips of bacon diced
- 4 eggs
- 3/4 cup (175ml) heavy cream
- Salt
- Pepper
- 2 ounces (55g) cheddar cheese, cubed or shredded (3/4 cup)
- 2 ounces (55g) American style cheese, cubed or shredded (1/2 cup)
- 1 ounce (25g) grated romano cheese
- Diced red bell pepper
Sauce
- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tbsp prepared mustard
- ½ tsp garlic powder
- 1 tsp smoked paprika
- ¼ tsp cayenne pepper
- ¼ cup fresh parsley – finely chopped
- Salt
- Pepper
Condiments
- Diced onions
- Diced pickles
- Bacon Bits
Directions for making Cheeseburger Quiche
Pie Crust
Add the flower to the bowl of a food processor. Add the diced butter and pulse until until the mixture resembles coarse breadcrumbs. There should be lumps of butter about the size of a pea. Add the salt and pulse 2-3 times to incorporate.
Add 2 tbsp of water and pulse 2-3 times. Mixture should start coming together but not turn into a dough ball. If more water is needed, add 1 tbsp at a time and pulse until the dough begins to come together.
Turn the mixture onto a surface and gently bring it together with your hands. Shape the dough into a disc about 1 inch thick.
Wrap in cling film and chill for at least 30 minutes.
Start preheating the oven to 450° F (230° C).
Roll out the dough large enough to fit into a 9 inch pie pan.
Drape the crust over the pie pan.
Gently form the dough into the pan. Remove excess dough from the edge of the pan leaving about 1/2 inch of overhang. Press the overhanging dough up onto the rim of the pie pan and pleat the edges. Dock the bottom of the pie crust with a fork to help prevent bubbling of the crust.
Blind bake the pie crust by lining the crust with a double layer of aluminum foil. Bake in the preheated 450° F oven for 8 minutes. Reduce oven temperature to 325° F (165° C). Remove foil and continue baking for 4 to 5 minutes.
Remove the pie crust from the oven and let it cool.
Prepare your filling
Cut the strips of bacon into pieces about ¼ in wide. It is easier if the bacon is really cold.
Place bacon pieces into a skillet and cook until crispy.
Remove bacon from pan with a slotted spoon onto a paper-lined plate or bowl and allow to cool
Remove excess bacon fat from the skillet, leaving about 2 tbsp.
Peel and dice the onion.
Crush or dice the garlic.
Add the ground beef to the skillet and begin to cook. Break the ground beef into small chunks.
Once the beef starts losing the pink color, add the diced onions and continue cooking until the onions begin to soften. Then add the garlic and cook until fragrant. Salt and pepper to taste.
Using a slotted spoon, remove the cooked beef mixture from the skillet and place on a plate to cool.
Assemble and Bake
Preheat your oven to 350° F (177° C)
In a bowl, combine the eggs, heavy cream, salt and pepper. Whisk until the mixture is well-blended and bubbles begin to form on the top.
Into the pie crust, add the cooked ground beef, bacon bits, cheese, diced onion, and bell pepper.
Pour the egg mixture into the pie crust.
Place the bacon cheeseburger quiche into the oven and bake for approximately 30 - 45 minutes until a knife inserted into the center comes out clean.
Remove the bacon cheeseburger quiche from the oven and allow it to cool for 10 minutes before serving.
Prepare Condiments
Prepare the sauce by combining the mayonnaise, ketchup, mustard, garlic powder, smoked paprika, cayenne pepper powder, parsley, salt, and pepper.
Dice onions and pickles
Serve
Once the quiche has been allowed to rest, slice and serve. Garnish with sauce, diced onions, diced pickles, and bacon bits.
