Burger Breakdown
So...tell me about your burgers.
So, Red 88, is by no means a burger joint. It is best considered and Thai Asian Fusion Kitchen serving up a variety of asian inspired fusion dishes from Birria Noodz Soup, to the traditional Pad Thai, to Curry Fried Rice. However, it doesn't mean that they can't cook up a serious cheeseburger. And with only two burgers on their menu, they definitely need to play their best game.
Today on the menu is the Creamy Miso Burger. On the menu, this Hamburger sandwich boasts a "Half pound fresh Wagyu and sirloin blend burger patty on a brioche bun, with smoked provolone cheese, creamy Parmesan miso sauce, sauteed mushrooms & onions, arugula & seared jalepenos. Served with criss-cut fries. Upgrade to mango salad, mentai pumpkin or drunken fries, or add bacon/extra grilled jalapeno."
Let me take this opportunity to share with you that the online menu, which is shared here, is different from the menu in the restaurant. The online menu shows that the criss-cut fries come with the burger. The restaurant menu shows that the criss-cut fries are an add-on. So there will be a bit of confusion if you view the online menu and then see the in-restaurant menu.
Let's See What We Have Here
With this Asian fusion burger, I felt that it was best to try it at the restaurant. Takeout would have probably dulled the experience.
This artisan creation came to the table looking good! Nice big half-pound patty, melty/smoky provolone cheese, sauteed muschrooms and onions with a generous portion of Parmesan miso sauce. Crispy veg poking out of the bottom.
Not letting the cheeseburger steal the whole show, the Creamy Miso Burger came with a nice protion of criss-cut fries. They looked super crispy and appeared to have plenty of seasoning.
I need to dive in on this thing.

The Creamy Miso Burger comes with a nice, big and fluffy brioche roll. Toasted on an open grill, not a flat top. Had a little bit of char and plenty of toast. Tasted great.
Compliments to the chef for the light toast on the outside of the bun. You can see the grill marks as the meal comes to the table. Pro move!
Let's look under the hood of this baby.
The Creamy Miso Burger came to the table ready to eat. Had to do a bit of dis-assembly to take a look to see what makes this thing run.
After removing the top bun, you can see the generous portion of the Parmesan miso sauce. Plenty of sauce to cover the sauteed mushrooms and onion. Not overflowing with toppings, but plenty to get the job done. Gave all the pieces a taste and everything had a great flavor. This was the only sauce on the sandwich and there was no need for additional sauces or spreads. This cheeseburger was plenty juicy and flavorful and another layer of flavor would have thrown it out of balance.
Produce consisted of fresh arugula. It added that nice fresh veg vibe that balances out the sauteed mushrooms and onions. Could have been a little more generous with the fresh arugula as I like a bit of crisp veg crunch on my cheeseburgers.
Big slice of melty provolone. Nice and smokey. Covered the half-pound patty - coast to coast.
The Chef did a nice job preparing the burger. Ordered my patty cooked to medium and it arrived cooked to medium. The patty had nice grill marks from the open grill.
Smelled fantastic. Nice and beefy aroma.
Super juicy burger. This fell into the "drip all over the plate juicy" category.
Patty texture was a little tight. It certainly felt like it was a sirloin blend. Not sure how much wagyu was in the blend, though. I'm guessing it wasn't A5 Wagyu blended with the sirloin. Wagyu A5 is super fatty and rich. Plus the fat melts at a lower temperature than the fat from American cattle. I would bet that it was an American Wagyu variety.
The patty was under-seasoned. Could have used a bit more salt. The Parmesan miso sauce and smoked provolone cheese did not bring enough salt to the party.
Nice grill and cook. Nice and juicy even though it was cooked on an open grill. Not over-cooked and dry. This was a big patty too. It covered the bun and then some.
So, who are your your friends here?
The criss-cut fries were nice and crispy. Well seasoned. Nice portion. If you have to pay for an upgrade, I do recommend so. It is well worth it.
It's a Wrap
This cheeseburger is definitely a champ. Red 88 nails it with the condiments. Everything comes together to make a complete juicy, saucy, savory, cheeseburger.
One thing that I am missing from this cheeseburger is the seared jalapenos. Didn't get the heat or the flavor. Couldn't see them either. Perhaps they were missing in action. Not sure. Regardless, this was an amazing burger.
Definitely a great value. The thought and work that went into this burger along with the delicious results puts it in the right price range. Plus, this cheeseburger is a monster with a half-pound patty. This artisan cheeseburger creation is in the "must eat again" category.
